What’s In Your Petri Dish?

On February 18 we hosted a combined meeting with SCIFTS (Southern California Institute of Food Technologists) and the RCA (Research Chef’s Association) here at Village Green Foods.

130 people attended and enjoyed fabulous food provided by Del Real FoodsSeascape, Inc. and Village Green Foods (that’s us!). We did decide to have a little fun – to that end we made a little herbed chicken, a little bell pepper ratatouille and, of course, JELLO in Petri Dishes!

We had 2 excellent speakers –  Melissa Calicchia of Food Safety Solutions spoke about the Listeriosis outbreak in carmel apples – what is going on lately with unexpected risks in food. Ash Husain from CedarLane Foods spoke on the rise of High Pressure Pasteurization.


Who knew that Caramel Apples could be so mysterious!
