What’s In Your Petri Dish?
On February 18 we hosted a combined meeting with SCIFTS (Southern California Institute of Food Technologists) and the RCA (Research Chef’s Association) here at Village Green Foods.
130 people attended and enjoyed fabulous food provided by Del Real Foods, Seascape, Inc. and Village Green Foods (that’s us!). We did decide to have a little fun – to that end we made a little herbed chicken, a little bell pepper ratatouille and, of course, JELLO in Petri Dishes!
We had 2 excellent speakers – Melissa Calicchia of Food Safety Solutions spoke about the Listeriosis outbreak in carmel apples – what is going on lately with unexpected risks in food. Ash Husain from CedarLane Foods spoke on the rise of High Pressure Pasteurization.
Who knew that Caramel Apples could be so mysterious!
My name is Vic Grilli. From 1995 to 2005 I owned The Salsa Factory with my former wife. We were located in Mountain View, California. We closed the business (which was doing very well) because of our divorce and different interests.
I am now considering the possibility of starting a new business start up as I have, for the past year or so, formulated some new products that I am certain will do very well on a national scale.
I am open to product packaging ideas. However, my previous experience has been with 8 oz and 16 oz glass containers and #10 cans. I have also been considering a sidebar discussion on the added product quality value of High Pressure Pasteurization.
